This is a collaboration between a winemaker, a brewer and a wine lover who got together for a multidisciplinary, experimental brew! We threw our best (and worst) ideas into this hybrid, crossing the boundaries of natural wine and spontaneously fermented beer to create a bold and psychedelic chimera! For 7 months, Assyrtiko grape skins (150g/l), transported straight from Halkias winery, were kept in constant motion to extract as much as possible, unlocking the soul still locked inside! The result is like volcanic soil: packed with minerals, sharp acidity, delicate but bold tannins and aromas of brett with notes of old wildflowers with that funky flor biotransformation magic!
