This spontaneous mixed fermentation wild ale is a unique take on a barrel aged farmhouse ale with grape skin contact. The beer is brewed solely with native wild yeast and bacteria, and undergoes fermentation in a homemade coolship before being barrel aged for about a year to achieve a complex acidity. During the barrel aging the beer undergoes further fermentation as the yeast and bacteria continue to work their magic. The beer is then aged on local Sideritis grapes from Parparoussis winery, with skin contact of one whole year! The beer boasts a distinctively fruity aroma, tempered by a moderate level of tartness and a tantalizing touch of grape-derived sweetness. Subtle undertones of caramel and earthy/mushroom-like notes are also present, leading to a lingering medium tart aftertaste.
